Yum Yum Granola Cookies

1-1/2 cups butter

1/2 cup brown sugar, well packed

1/2 cup Karo White Corn Syrup

2 eggs

1 teaspoon vanilla

1-3/4 cup + 2 tablespoons flour

3/4 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

3 cups flax plus granola with pumpkin seeds

1-1/2 cup apricots, dried and chopped

Beat butter and sugar together. Add Karo white corn syrup, eggs and vanilla. Sift flour, soda, cinnamon and salt together. Add to Karo corn syrup mixture and mix well. Stir in granola and apricots. Drop by heaping teaspoonfuls on parchment paper. Bake at 360 degrees for 10 minutes and edges are crisp and golden brown.
