Recipe: SPAM Minced Pot Pie

SPAM Minced Pot Pie

1 package refrigerated pie crust (2 crusts)

3 tablespoons butter, melted (reserve 1 tablespoon)

1-1/2 12 ounce cans SPAM Classic, diced small

1-1/2 cups Fuji apples, diced small

3/4 cup sugar + 1 tablespoon

4-1/4 teaspoons cinnamon, divided

3 tablespoons flour

3/4 cup canned mincemeat

2/3 cup golden raisins

In a large cast iron skillet melt 3 tablespoons of butter. Take out 1 tablespoon of butter and set aside for brushing on top of crust. Dice 1-1/2 cans SPAM Classic into small pieces and add to butter in skillet. Turn stove on low heat and let cook. Dice 1-1/2 cups Fuji apples into small pieces and add to skillet. Turn the stove up to medium heat. Add 3/4 cup sugar to skillet. Add 1-1/4 teaspoons cinnamon to skillet and cook until bubbly. Next, stir in 3 tablespoons flour to thicken. Add 3/4 cup canned mincemeat and 2/3 cup golden raisins to skillet and cook until mixture begins to thicken. Place the one pie crust in a 9-inch pie pan and add the SPAM mixture. Take the second pie crust and place on top, crimp the sides and put slits on the top of the pie crust. Brush with melted butter and sprinkle with remaining sugar and cinnamon. Bake at 375 degrees until crust is lightly browned, about 40 minutes.
